Bombay Sandwich



When I went to India, one of the most common sandwich that was available on every street corner was the Bombay Sandwich. I was really intrigued with the ingredients  potato and spices in a sandwich!!!! Being a foodie I had to try it and trust me I was not disappointed, it was amazing and immediately it became my firm favorite.

It was a wonderful combination of green coriander chutney layered in between toasted bread, thin slices of boiled potato with cucumber, tomato and slices of red onion. The sandwich was delicious and the ingredients did vary slightly from vendor to vendor. I have created my own version of the Bombay Sandwich using the Chunky proper Pickle from English Provender.

Bombay Sandwich
Toasted bread rolls layered with spicy sauteed potatoes and garnished with English Pickle, peppers, cucumber, tomatoes and red onions.

Ingredients:
  • 3 Medium Potatoes Boiled
  • 2 Medium Tomatoes thinly sliced
  • 8 Cucumber slices
  • 1 Small red onion thinly sliced in rings
  • 1/2 of each colour Red and Green pepper thinly sliced
  • 2 tablespoons Olive oil
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Red chilli paste
  • 1/2 teaspoon Garlic paste
  • 1 tablespoon Lemon juice
  • 2 tablespoons English Provender chunky Pickle
  • 2 Soft Bread Rolls
Method:
1. Slice the potatoes into 5mm thick slices.2. In a bowl add 1 tablespoon olive oil, garlic paste, chilli paste, salt, lemon juice and mix together to make the marinade.3. In a shallow dish pour half the marinade and place the potato slices on it. Pour the rest of the marinade onto the potato slices and cover the dish and keep aside for flavours to infuse in potato slices.4. In a frying pan add 1 tablespoon olive oil and wait for it to heat, once hot add the pepper slices and saute for 2-3 minutes. Remove them from pan with slotted spoon and keep aside.5. In the same pan add the marinated potato slices and saute them on both sides until golden brown. Remove from pan and keep aside.6. Cut the bread rolls in half and in the same pan place the bread rolls cut side down and brown them slightly. Remove from pan and place the 2 bottom pieces of toasted bread rolls on a serving plate.To make the sandwich. Spread a layer of English Provender chunky Proper Pickle on to the toasted bread. Add a few slices of spicy potatoes, add cucumber, tomatoes, sauteed peppers and finish off with a dollop of English Provender chunky pickle and the onion rings.Place the top part of the toasted bread roll to complete the sandwich.

I was sent four jars of the English Provender Proper Pickle to sample ; Proper Pickle onion. Proper Pickle Beetroot, Proper Pickle finely chopped and Proper Pickle Chunky. In this recipe I have used the Proper Pickle Chunky.

Bombay Aloo Sandwich

Bombay Aloo Sandwich


Spicy potato filling encased in delicious Warburtons sandwich thins .

Ingredients:
  • 2 medium boiled potatoes peeled and diced.
  • 1/4 teaspoon turmeric 
  • 1/4 teaspoon chilli powder
  • 1 teaspon green chilli paste
  • 1 teaspoon salt
  • 1 teaspoon lemon juice
  • 1 tablespoon fresh coriander finely chopped
  • 1 tablespoon olive oil
  • 1/4 teaspoon mustard seeds
  • 6 warburtons sandwich thins of choice

Method:

1.In a pan add the oil, when it is hot add the mustard seeds and wait for them to splutter.2.Add to the pan the green chilli paste, salt, turmeric, chilli powder and saute the mixture for a few seconds.3.Add the diced potatoes and toss them around in the spice mixture until they are coated with the spices and warmed through.4.Add the lemon juice and the coriander and toss into the bombay aloo.Remove from heat and allow to reach room temperature.5. Split open the warburtons sandwich thins and spoon the bombay aloo mixture onto each slice.Place the top of the thins onto the filling to make a sandwich. You can either serve the sandwich as it is or place the sandwich in a sandwich toaster to toast it.

Sandwiches that are tasty, healthy and made using  more adventurous and  alternative bread bases, wraps and exciting fillings. 

I was sent a selection of  half and half, brown, white and seeded Warburtons sandwich thins and a shopping voucher to purchase ingredients to create a recipe using them. My Bombay Aloo Sandwich, is satisfying, healthy and spicy too. It is simple to make, yet it is packed with flavour and taste.

Chilli cheese toast




A delicious spicy twist to a toasted cheese sandwich.

Ingredients:

2 Warburtons thins or 4 slices white or brown bread
30g / 2 oz grated mild cheddar cheese
1 tablespoon finely chopped red / green capsicum
1 green chilli finely chopped
1 medium tomato de seeded and finely chopped
1 tablespoon tomato ketchup
1 tablespoon sweet chilli sauce


Method:

1. Split open the Warburton thins and place them side by side on a plate.
2. In a bowl mix together the tomato ketchup and the sweet chilli sauce and mix together.
3. Spread the mixture onto all four slices of the Warburtons thins.
4. Sprinkle the capsicums on top of 2 of the slices (keep other two slices for lids) followed by the tomato pieces.


5. Sprinkle the green chillies on top followed by the grated cheese.
6. Place the second slice of Warburton thin or bread on top of the filling to form a sandwich.
7. Place both the sandwiches in a sandwich toaster and toast for 3 minutes.
8. Remove from sandwich toaster and cut diagonally.
Serve hot.

Quesadilla-Mexican




Delicious snack made with tortilla wraps, vegetables and cheese.

Ingredients

4 whole wheat tortilla wraps
1 red onion finely chopped
1 courgette finely diced
1 tomato de seeded and finely chopped
60 g cooked sweet corn
30 g diced mixed peppers
1/2 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon cumin powder
1/4 teaspoon chilli flakes
90 g grated cheddar cheese
1 tablespoon olive oil

Method:

1. In a frying pan add the oil and wait for it to heat, add the onions and sauté until translucent
2. Add the diced courgette and the sweet corn and peppers. Add the salt, chilli flakes, cumin powder and paprika and mix well. Sauté for 3-4 minutes until vegetables are cooked.
3. Remove vegetable mixture from heat and keep aside.
4. In a clean frying pan place one of the wraps.Sprinkle some of the grated cheese on it and on top of the cheese add half the vegetable mixture.Add the chopped tomatoes on the top and add a little more cheese.
5. Place the second tortilla wrap on top of the cheese and press down with a spatula.Cook the Quesadillla for 1 minute and then flip it over.



6.Press again with the spatula and cook the Quesadilla on the underside for another minute.
7.Remove the quesadilla on to a plate and cut it into quarters or sixths.
8. Repeat for second pair of tortilla wraps.
Serve with dip of choice.

Novelty Kids Sandwiches- Cucumber Caterpillar


Novelty kids cucumber sandwiches in the shape of a caterpillar, perfect for parties.

Ingredients:

6 slices white or brown bread
1 tablespoon butter or Margarine
Cucumber slices
I small tomato
2 raisins
2 spaghetti sticks
Shredded lettuce

Method:

1. Using a cookie cutter cut out 4 round circles from each slice of bread.
2. Butter the bread circles and lay them out on a tray in pairs
3. On half the bread circles place thin slice of cucumber and make a sandwich by placing the second circle buttered side down onto the cucumber.
4. Break small 1 cm pieces from the spaghetti  and push it into the tomato on the top right and left sides making sure some of the spaghetti is sticking out.
5. Cut the raisins in half and push them onto the spaghetti sticks onto the tomato to form eyes.
6.Break two more 1 cm pieces if spaghetti and push them at the central bottom area of tomato.
7. Cut a semi circle out from the cucumber to make a mouth shape and push it onto spaghetti sticks secure it on to the tomato to make caterpillar mouth.
8. Take along spaghetti and thread onto it the 6  prepared sandwiches to form the caterpillar body.
9. Add the tomato by pushing that onto the spaghetti also to form caterpillar head, make sure eyes and mouth are placed forefront.
10.Break off any remaining spaghetti stick not required.
11. Place some shredded lettuce on to a plate and place the cucumber sandwich caterpillar onto it.
Serve immediately.

Novelty Kids Sandwiches ~ Fish shape with cheese filling


Kids novelty fish shaped cheese sandwiches.

Ingredients:

4 slices of brown /white bread
1 teaspoon butter
60 g / 2 oz grated cheddar cheese,
small piece of cucumber.
small piece carrot
2 raisins

Method:

1. Cut the crusts off the bread slices.
2. Cut out a fish shape from each bread slice(freehand or using cookie cutter)
3. Butter the fish shape bread slices and place them on serving dish.
4. Sprinkle some cheese on top of the fish shape bread slices and sandwich the second shape on top of it to make a sandwich
5. Place some shredded lettuce on a serving dish and place the fish shaped sandwich on it.
6.Cut some green strips from the cucumber peel and arrange them on the fish tail  to represent stripes.Cut out some carrot strips and arrange them on the fishes body to make stripes
7. Cut the raisin in half and use to make eye.



Serve Immediately

Novelty Kids Pin Wheel Lollipop sandwiches with cheese filling.


Cute little kids novelty pin wheel sandwich lollipops.

Ingredients:

4 slices white or brown bread
60 g  / 2 oz grated cheddar cheese
30 g / 1 oz grated carrots
1 tablespoon butter or margarine
16 Red or green grapes

8 sticks of spaghetti

Method:

1. Remove the crusts from the bread slices and place them on a flat surface.
2. Using a rolling pin flatten out the bread slices.
3. Spread the butter on the bread slices and sprinkle over it the cheese and then the grated carrots,


4. Starting at one end of the bread slice start rolling the bread to form a tight roll  like a swiss roll. Brush the edge of the bread slice with a little water and apply slight pressure so that the ends stick and sandwich rolls do not unravel.
5.Repeat for all four slices of bread.
6. Using a sharp knife divide each bread roll into 4 pieces.


7. Take the spaghetti sticks and break it in half.
8. Thread a grape on to the spaghetti , and then thread the pinwheels sandwich where the end is open onto the spaghetti to form a lollipop.Repeat for remaining sandwiches.


Serve immediately

NB -I used raw spaghetti to make the lollipops as they are for children ,you can use cocktail sticks but be careful with the wooden splinters.
You can replace the grapes with cherry tomatoes.

Novelty kids sandwiches~ Nutella spread in Bear shape



Nutella novelty bear character sandwiches perfect for a children's lunch box or tea party.

Ingredients:

4 slices white or brown  bread slices
2  tablespoon Nutella spread
1 small piece carrot

Method:

1. Remove the crusts from the bread slices and using a round cookie cutter out 2 circles from each slice.You should have 8 circles now
2. From the remaining bread cut offs, cut out 4 pairs of tear drop shapes approx 2 cm long to make ears.
3.Spread the Nutella on all eight circles.
4. At the top of 4 of the circles, position the bears ears on either side.


5. Place the second slice of bread on top of the slice with the ears placed on it. You will now have 4 Bear shaped sandwiches.
6. Slice the carrot and cut out two small bow shapes from it and keep aside.
7. Make a small grease proof paper cone and fill it with the Nutella.
8. Pipe eyes and snout and triangles on ears with the Nutella .


9. On two of the sandwiches place a blob of Nutella next to right ear and place the carrot bow  for girl bear.


10. Serve the sandwiches immediately.

Tortilla wrap with roasted vegetables- Secret recipe club challenge 23rd April 2012


This is my assignment with the Secret Recipe Club.The aim of the club is that you are allocated a blog from which you have to select  a recipe and try  it and blog about it.

My challenge for this month was to cook from Veronica's blog "My Catholic Kitchen". I choose the tortilla wrap as it is very versatile,  as it can be made easily with vegetarian ingredients. The original recipe can be found here. It has been adapted  to suit my vegetarian diet.

Delicious seasonal roasted vegetables encased in soft tortilla wraps.
Ingredients

4 tortilla wraps
1 courgette
1 carrot
1 red onion
6 baby tomatoes
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon oregano
1 tablespoon olive oil
1 tablespoon lemon juice
1/4 teaspoon chilli flakes
1 clove garlic

Method:

1. Peel the carrot and cut it in to ribbons using a mandolin.
2. Wash the courgette and remove the top stalk and bottom. Slice it into ribbons using a mandolin.
3.Peel and slice the onion in to thin strips.Halve the tomatoes.
4. Peel and slice the garlic.
5. In a oven proof tray add all the vegetables except the tomatoes , add the olive oil, garlic  and sprinkle the vegetables with salt and pepper.Toss to mix the vegetables and seasoning.
6. Place the vegetables  in a preheated oven 175 degrees C /350 degrees F for 20 minutes.
7. After 20 minutes remove from oven and add the oregano, chilli flakes, lemon juice  and the tomatoes and return to the oven for a further 10 minutes.
8. Remove from the oven and allow to cool slightly.
9. Place the tortilla wraps on a plate spoon the oven roasted vegetables in the centre of each wrap.
10. Roll up each wrap  and cut each  into two diagonally.
Serve immediately.

Toasted sandwich rolls


Toasted sandwich rolls- A twist to the usual sandwich.Spicy potato filling encrusted in bread slices and toasted in the oven till golden brown and crispy.Perfect snack served with green coriander chutney.



Ingredients:

8 slices of bread
3 medium  potatoes boiled and mashed
1 small onion finely diced
1 teaspoon salt
1/2 teaspoon ginger paste
1/2 teaspoon  garam masala
1 tablespoon lemon juice
1/2 teaspoon sugar
2 finely minced green chillies
1/2 teaspoon chilli powder
1 tablespoon olive oil for cooking the masala
Spray cooking oil.



Method:

1. In a pan heat 1 tablespoon oil , when hot add the onions and cook till soft  and translucent.
2. Add the ginger paste and chillies.
3. Add the mashed potato , followed by the salt, chilli powder, garam masala, lemon juice and sugar.
4. Mix all the spices throughly into the potato mixture. Adjust seasoning as required.
5. Take off heat and cool.
6. Divide the potato masala in to 8 portions, and roll each one into a sausage shape to fit the width of the bread slice.Chill for 15-30 minutes.

7. Remove the crusts from the bread slices.
8. Using a rolling pin roll out the bread slices to flatten them.
9. Place the masala sausage on the bread roll at one end and roll up the bread slice tightly.
10. Wet the other end of the bread slice and stick it down to form a sausage shape.
11. Repeat the process for all bread slices.
12. Spray a baking tray with spray oil and place bread rolls on it.(You can use ordinary oil and just brush the bread rolls over with it instead.)
13. Spray the bread rolls with the spray oil and bake in a pre heated oven at 200 degrees centigrade for 15 minutes or until golden brown.
Remove  from oven and serve hot with green coriander chutney.

Cheese and salad baguette.


Cheese salad baguette- Fresh crispy french baguette filled with mango chutney ,mature chedder cheese and crunchy salad.A delicious lunch time treat.

Ingredients:

1 french baguette.( 12 inch long)
1 tablespoon sweet mango chutney
4 slices mature chedder cheese or any cheese of your liking
8 slices cucumber
4 slices tomato
2 leaves of iceberg lettuce
red onion slices ( optional)
pinch salt and pepper.

Method:

1. Cut the baguette in half and spread mango chutney in it.
2. Shred the lettuce leaves and place on top on mango chutney.
3. Add the cheese slices.
4. Top with cucumber and tomato slices and red onion.
5. Sprinkle with salt and pepper.
6. Cut into four parts.

Serve immediately with potato crisps.

Toasted Cheese and Tomato sandwich.



A light and simple cheesy snack, delicious and healthy.
Ingredients:

4 slices white/brown medium sliced bread.
2 oz grated cheddar cheese
1 tomato thinly sliced
3 jalepeno chilies slices or 1-2 green chillies(optional)
1 teaspoon butter for spreading on bread slices


Method:

1.Butter the bread slices.Keep aside.
2.In a sandwich toaster (or can cook sandwich on griddle) place1 slice bread buttered side down .
3. Sprinkle some cheese then place on top of it the tomatoes slices and sliced jalepenos or chilies.
4.Cover with 2nd slice of bread buttered side up.Repeat for other two slices of bread.
5.Close the lid of sandwich maker and cook for approximately  4 minutes till sandwiches  are golden brown.
6. Remove from sandwich maker . Transfer to serving dish.

Serve hot with tomato ketchup.
