I recently reviewed some Chobani yoghurt and made this lovely yoghurt and coconut chutney
and these delicious savoury sweetcorn drop pancakes with them. The yoghurts are rich, creamy and delicious and low fat too. This makes them perfect for baking, cooking or just plain eating.They make wonderful smoothies and are ideal for stirring into soups and sauces.

ReplyDeleteI did durban curried whole chicken last night with a carrot and mint pilaf. Then I did a yoghurt dip, grated garlic, fresh coriander, cumin powder, chiili, salt, lemon juice and yoghurt. It was scrummy!

ReplyDeleteserves 8 or more
1 1/2 cups full-fat yogurt
2/3 cup olive oil
1 1/4 cup sugar
3 eggs
1 teaspoon vanilla
2 1/2 cups all-purpose flour
2 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
Pinch freshly ground nutmeg
Heat the oven to 350°F. Grease a 9-inch springform pan lightly with baking spray or oil, and line the bottom with parchment.
Whisk together the yogurt, olive oil, sugar, eggs, and vanilla. Add the flour, baking powder, soda, salt, and nutmeg right into the liquids and stir just until no lumps remain.
Pour the batter into the cake pan and bake for 50 to 60 minutes, covering with foil at the end if the top is browning. When a tester comes out clean, transfer the cake to a cooling rack and let it cool for 10 minutes before removing it from the pan.
I have used yogurt in my quiche and it tasted divine!

I love to use yoghurt as a marinade for meat as I love the creamy flavours and with yoghurt you can that without the extra fat content. Lamb cutlets in my favourite with a bit of lemon juice, rice wine, chilli, tumeric, sesame oil and coriander and then in the grill to be served with rice. Delicious!

ReplyDeleteI use yogurt in a fruity trifle...Make sugar-free jelly (any flavour) add fruit and allow to set. Then dissolve gelatine in boiling water, allow to cool a little then add fruit yogurt (to go with the fruit jelly) and pour over the set jelly allow to set and add cream. A great fruity trifle.

ReplyDeleteSomething I did with yoghurt last year was attempt icecream with it. Mixed cream, yoghust, boiled fresh blackberry juice (freshly picked, it was blackberry season) and sugar.

ReplyDeleteLemon yoghurt cake! I use Greek yoghurt for the added creaminess and t replaces a lot of the fat in a 8 inch cake so it makes a low fat, light and delicious lemon cake.
