Cauliflower Soup~5-2 diet



Creamy and rich cauliflower soup delicately fragrance with nutmeg.

Ingredients:

240 g  fresh cauliflower florets finely chopped
1 medium potato peeled and diced
1 small white onion peeled and finely diced
1 teaspoon olive oil
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/2 teaspoon white pepper
100 ml water
150 ml milk
1 teaspoon olive oil

Method:

1. Place the potato and cauliflower in a microwaveable bowl and add the 100 ml water to it.
2. Cook the cauliflower and potato on high power for 10 minutes or until the cauliflower and potato are fully cooked.Keep aside
3. Heat the oil in a pan on medium heat and add the onions and sauté them until soft and translucent but not browned.
4.Add the cauliflower and potato to the onions and mix together. Transfer the mixture to a blender jug and purée the soup to a fine purée.
5. Transfer the puréed soup to the pan and add the milk. Bring the soup to a slow simmer and add the salt, pepper and nutmeg.Simmer for 2-3 minutes longer.
6. Transfer the soup to serving bowls and garnish with a small  pinch of nutmeg.

Serve with bread rolls

  1. This cauliflower soup actually looks good! My husband doesn't want me to buy cauliflower because he hates it. One time I tried to cook cauliflower in the microwave, and the microwave exploded! I'm not kidding. The recipe for cooked cauliflower said to microwave it for 20 minutes. I've never bought cauliflower again. But I might, now that I have this decent recipe!

    1. That's so funny exploding cauliflower. Trust me the cauliflower in this recipe will not explode as its cut small and is immersed in water for cooking.

  2. I love cauliflower soup! I prefer to steam cauliflower though and it only takes 10-15 minutes if you cut up the cauliflower into small pieces.

  5. I honestly think soup is one of my favourite things to make, slow roasted tomatoes and red pepper is my current favourite and spicy parsnip but this also looks super delicious and I may try my hand!

  17. The soup look delicious, but that carb count won't allow me to indulge. I can only eat 20 carbs a day. If I could satisfy hunger with wishful thinking, I think I'm covered. :)

    1. @ Bonnie you can omit the potato totally if you like that will reduce the carbs.

  20. I really cannot imagine cauliflower soup! I would hate to lose the texture of the cauliflower. But I suppose there will be a lot of people who would rather have cauliflower in a soup. Ingenious idea though.

  26. This looks very healthy. We have a great Czech recipe of breaded cauliflower, although it is not so healthy. Simply cut into pieces, half boil, after cooling cover in flour, eggs and breadcrumbs, fry in a pan. Serve with boiled potatoes. Delicious.

  54. I've not tried cauliflower soup before. My nan used to make the most delicious cauliflower cheese when I was younger. I used to go round hers after college for a serving :-)
